We emptied Corbin’s piggy bank this week.  I took the “save and invest” sections and placed a trade in his brokerage account.  I took the donate and donated it.  He took the spend (a whole $10) and bought this:

 

He paid the cashier himself and everything.

Corbin’s Big Boy Bed Thursday, Oct 16 2008

He had actually bent the frame on his toddler bed from jumping on it.  It looked hilarious standing up for the trash man…it was bent over!   I am hoping he keeps this alive for a while.  I am glad the bed was free!!

A perfect fall day Thursday, Oct 16 2008 

Last Saturday we took my parents and the kids to Deanna Rose and the Louisburg Cider Mill.  It was a gorgeous day!

Mapo Tofu Thursday, Oct 16 2008 

I am not one who is disuaded by textures when I eat.  My favorite food it oyters, the runner up being sushi.  I love miso soup and my favorite part in the tofu.  I bought some from the store have no clue what to do with it.  My fellow MM nesties helped me out and one of the suggested this yummy dish.

Mapo Tofu

Ingredients:

  • Marinade for Ground Pork:
  • 1 1/2 Tbsp tapioca starch (can substitute cornstarch, which is what I did)
  • 2 tablespoons soy sauce
  • Other:
  • 1/4 pound ground pork
  • 1 pound regular tofu (medium firmness)
  • 1 leek or 3 green onions (I used green onions)
  • 1/4 tsp salt
  • 1 tsp Chinese salted black beans (fermented black beans, also called Chinese black beans), or to taste (I left this out as I hate beans and everything they stand for)
  • 1 Tbsp chili bean paste, or to taste
  • 3 Tbsp stock (chicken broth)
  • 1 Tbsp cornstarch
  • 2 Tbsp water
  • 2 Tbsp light soy sauce
  • Freshly ground Szechuan pepper
  • 2 – 3 tablespoons oil for stir-frying, as needed

 

Preparation:

Mix marinade ingredients.  Marinate pork for about 20 minutes.

Honestly, growing up in the land of beef, pork is outside of my bubble.  And I hate bacon…hate it.  But I had some ground pork (which is harder to find than tofu around here!) leftover from my blue cheese meatloaf.  I thought it added a good flavor to that so I was excited to try it in the recipe.

Cut the tofu (bean curd) into 1/2 inch (1 cm) square cubes, and blanch (drop into boiling water) for 2 – 3 minutes. Remove from boiling water and drain.
Chop leek or green onions into short lengths.

The tofu was amazingly easy to work with.
Heat wok and add oil.  When oil is ready, add the marinated pork. Stir-fry pork until the color darkens. Add salt and stir. Add the salted black beans. Mash the beans with a cooking ladle until they blend in well with the meat. Add the chili paste, then the stock, bean curd, and leek or green onions.
Turn down the heat.  Cook for 3 – 4 minutes.


While cooking, mix cornstarch, water, and soy sauce together. Add to wok and stir gently. Serve with freshly ground Szechuan pepper. 

 

It was sooo yummy!!  I loved the flavor of the pork.  Corbin on the other hand, not a fan.  He screamed “it’s squishy!!” and spit it into the trash.  What do you want from a kid who lives on yogurt, cheese, apples, and cheesburgers from “old mcdonald”
