You should make this.  Right now.  I forgot to take a picture, but I still had to post this one.  It is another from Better Homes and Garden’s Cookbook. 

1/2 of a 17.63 oz package of pre-cooked lentils (1 1/2 cups, I buy dried and had to cook them)

3/4 c thin red sweet peppers and/or zucchini and/or carrot.  We did the red pepper.

2 tbl fresh cilantro

3 c shredded savoy or napa cabbage

1 recipe thai peanut dressing

2 tbl thinly sliced green onion

2 tbl chopped dry roasted peanuts

1. Combine lentils, sweet pepper, and cilantro.  Divide cabbage among 4 salad plates.  Top each with lentil mixture.  Drizzle with dressing.  Sprink with green onion and peanuts.

Yum.  Just sayin.

Thai Peanut Dressing-

In a small saucepan combine 1/3 c water, 1/4 c creamy peanut butter (we used PB2), 1 tbl reduced-sodium soy sauce, 1 tsp sugar, 1/4 tsp ground ginger, and 1 clove garlic, minced.  Whisk over low heat until smooth.

Again I say it.  Yum.
