I decided to branch, I decided to try something new. I decided to make rice outside of the rice cooker. That decision was a mistake.
I was looking forward tothis recipe. I love all things seafood, I love carbs. Whats not to love about this? The shrimp and tomatos turned out yummy, the rice turned out hard. I even added water at one point trying to get it to cook. No help. So the moral of the story is stick to the rice cooker.

Maybe try adding the wine/water in smaller increments? And use veggie/chicken stock rather than water? Every time I’ve used ariobo rice I start out with 1 1/2 c., then 1 c., then 1/2 c. increments after that.

I’ve had some rice failures as well but I don’t own a rice cooker.
Cooking rice is difficult! I also use a rice cooker. I even manage to screw THAT up sometimes.
Oil on anything can interfere with water absorption. I’m kind of surprised that they had you put the uncooked rice in after using oil. Maybe next time cook the rice separately and add it in. FWIW – I don’t own a rice cooker and I make rice all the time, just not with an oil slicker on it. It comes out fine by the package directions.
